Ingredients
3 eggs
1 pint of milk
1 lb self raising flour
6 oz of caster sugar
3 teaspoons of baking powder
Directions
1. In a jug or bowl, add the three eggs and one pint of milk. Whisk it together
2. Now add the dry ingredients, starting with the self raising flour, the 6 ounces of caster sugar, and 3 tablespoons of baking powder. mix everything together.
3. Leave the mixture to rise for about an hour
4. After an hour, take a large spoon and beat the batter to a thick dropping consistency. If you think it's too thick, add a splash of milk
5.Heat a large frying pan or griddle on a medium heat. Wrap a piece of butter in a piece of tissue or serviette to grease the pan.
6.Turn the heat up to full and use the spoons to dollop the batter to the pan. Leave the pancakes to fry until bubbles appear and the edges get darker, flip them with a spatula
•They should be evenly browned on both sides
